2 cups olive oil

Goat's cheese, sliced

1 baguette to serve with

1 pouch of Isadora Mexican Rice with Corn

3 shredded chicken breasts

2 avocados (one diced, one for garnish)

½ cup whole black beans

3 tablespoons mayonnaise

2 tablespoons chipotle sauce

2 tablespoons BBQ sauce

Sesame seeds to taste

Lime juice to taste

Fresh cilantro

Salt and pepper to taste

PREPARATION

  1. Heat the Isadora White Rice with Corn for 15 minutes.
  2. In a skillet, sauté the shredded chicken with oil and BBQ sauce. Season with salt and pepper.
  3. In a bowl, mix mayonnaise, lime juice, chipotle sauce, and chopped cilantro to make a dressing.
  4. To assemble: In a serving bowl, layer the rice, diced avocado, and black beans. Top with the chicken, drizzle with the dressing, and garnish with more avocado and sesame seeds.
