Chipotle Chicken Pokebowl
ingredients
9 tree chile, Verde Valle
Un queso de cabra recortada en rebanadas gruesas.
2 cups olive oil
Goat's cheese, sliced
1 baguette to serve with
1 pouch of Isadora Mexican Rice with Corn
3 shredded chicken breasts
2 avocados (one diced, one for garnish)
½ cup whole black beans
3 tablespoons mayonnaise
2 tablespoons chipotle sauce
2 tablespoons BBQ sauce
Sesame seeds to taste
Lime juice to taste
Fresh cilantro
Salt and pepper to taste
PREPARATION
- Heat the Isadora White Rice with Corn for 15 minutes.
- In a skillet, sauté the shredded chicken with oil and BBQ sauce. Season with salt and pepper.
- In a bowl, mix mayonnaise, lime juice, chipotle sauce, and chopped cilantro to make a dressing.
- To assemble: In a serving bowl, layer the rice, diced avocado, and black beans. Top with the chicken, drizzle with the dressing, and garnish with more avocado and sesame seeds.
