Greek Salad with Beans
ingredients
4 chiles guajillo, Verde Valle
4 tablespoons olive oil
¼ de cebolla, finamente picada
4 garlic cloves, finely chopped
½ k de champin?ones, rebanados
1 teaspoon chicken soup powder
1/2 k mushrooms, sliced
1 pouch of Isadora Whole Mayocoba Beans
1 European cucumber, thinly sliced
½ cup cherry tomatoes
¼ red onion, thinly sliced
½ block of feta cheese
½ cup black olives
2 tablespoons capers
Salt and pepper to taste
Olive oil to taste
Fresh mint leaves
PREPARATION
- Heat the Isadora beans in the microwave for 1 minute. Drain and set aside.
- Cut the cherry tomatoes in half, slice the cucumber thinly, and cube the feta cheese.
- In a bowl, mix the beans, tomatoes, cucumber, onion, cheese, olives, and capers.
- Drizzle with olive oil, season to taste, and garnish with mint leaves.
