Mayocoba Bean Bowl with Vegetables
ingredients
50g cranberries, Verde Valle
50g nuts, Verde Valle, chopped
50g raisins, Verde Valle
1 triangle Brie cheese.
250g puff pastry.
2 diced figs.
1/2 cup raspberry jam.
50g pistachios.
1 cup Verde Valle Mayocoba beans, soaked
1 onion
3 cups water
½ cup cooked edamame
1 pink radish (or watermelon radish), thinly sliced
1 grilled chicken breast, diced
½ avocado, diced
½ cup cooked beet, diced
Olive oil
Fresh parsley leaves
Salt and pepper, to taste
PREPARATION
- In a pot, add water, salt, onion, and soaked beans. Simmer for about 2 hours or until the beans are soft.Shortcut: In a pressure cooker, cook for 50 minutes.
- Place a generous portion of the cooked Peruvian beans in the center of each bowl.Arrange the edamame, radish slices, grilled chicken, avocado, and beets around the beans.
- Drizzle with olive oil, sprinkle with fresh parsley, and season with salt and pepper to taste.
