50g cranberries, Verde Valle

50g nuts, Verde Valle, chopped

50g raisins, Verde Valle

1 triangle Brie cheese.

250g puff pastry.

2 diced figs.

1/2 cup raspberry jam.

50g pistachios.

1 cup Verde Valle Mayocoba beans, soaked

1 onion

3 cups water

½ cup cooked edamame

1 pink radish (or watermelon radish), thinly sliced

1 grilled chicken breast, diced

½ avocado, diced

½ cup cooked beet, diced

Olive oil

Fresh parsley leaves

Salt and pepper, to taste

PREPARATION

  1. In a pot, add water, salt, onion, and soaked beans. Simmer for about 2 hours or until the beans are soft.Shortcut: In a pressure cooker, cook for 50 minutes.
  2. Place a generous portion of the cooked Peruvian beans in the center of each bowl.Arrange the edamame, radish slices, grilled chicken, avocado, and beets around the beans.
  3. Drizzle with olive oil, sprinkle with fresh parsley, and season with salt and pepper to taste.
