Whole Black Bean Salad with Mango
ingredients
1 tablespoon olive oil
200 g chicken breast, chopped in
12 mushrooms, sliced
1 garlic clove
1 cup impegable rice, Verde Valle®, cooked
1 brocoli head, chopped
1 can mushroom soup (400 g)
1 pouch whole black beans, Isadora
6 disinfected lettuce leaves
1 cup baby spinach
1 cup arugula
2 pickles, sliced
1 mango, thinly sliced
¼ cup sesame seeds
½ pickled red onion
Olive oil, to taste
¼ cup agave syrup
1 cup feta cheese, cubed
3 tablespoons chopped walnuts
Salt and pepper, to taste
PREPARATION
- In a salad bowl, combine the lettuce, baby spinach, arugula, pickles, red onion, black beans, olive oil, and season with salt and pepper. Toss gently.
- Serve on a plate and top with mango slices and feta cheese.
- Garnish with chopped walnuts.
