3 cups Extra long grain rice Verde Valle®

1cups raisins, Verde Valle®

¾ cup sugar

1 tespoon butter

3 cups water

3 cups milk

¼ teaspoon salt

4 separated eggs

1 ½ teaspoon vanilla

¼ de teaspoon cinnamon powder

¼ de teaspoon cream of tartar

PREPARATION

For the rice: BUTTER a pay container. In a pot place the rice and cook it until it gets soft; add milk, ¼ cup of sugar and salt. Cook over medium heat and continue moving until it gets creamy. In a bowl stir yolks and a vanilla teaspoon. Add rice, raisins and cinnamos. Still cooking for 2 more minutes. POUR the rice in the buttered container. For the meringue: BEAT egg whites, and when they start to sponge, add the rest of sugar, cream of tartar and the rest of vanilla until peaks are formed. PLACE the meringue over the rice. Bake for 5 minutes at 200°C or until you can see meringue gets lightly browned. TAKE OUT of the oven and serve immediately.
